Mix It Up Monday: Chia Banana Berry Muffins

Mini Muffins for little mini’s

Ingredients:

  • 1 cup Buckwheat Flour
  • 2 Organic Bananas
  • ½ cup almond milk
  • ¼ cup almond milk
  • ¼ cup chia seeds
  • ¼ cup organic blueberries
  • 1 tsp bicarb soda (organic)
  • 1 tsp cinnamon
  • 2 organic eggs

 

Instructions

  1. Soak chia seeds in ¼ cup almond milk
  2. Mash 2 bananas
  3. Place all other ingredients into large mixing bowl or thermomix
  4. Stir then add bananas
  5. Warm oven to 180
  6. Place mix into mini muffin tray
  7. Bake for 15 mins

 

This is a favourite for Winnie and Freddie. They love a little healthy snack that will keep them energised for the afternoon. They taste delicious and make a wonderful bite size snack.
