Mini Muffins for little mini’s
Ingredients:
- 1 cup Buckwheat Flour
- 2 Organic Bananas
- ½ cup almond milk
- ¼ cup almond milk
- ¼ cup chia seeds
- ¼ cup organic blueberries
- 1 tsp bicarb soda (organic)
- 1 tsp cinnamon
- 2 organic eggs
Instructions
- Soak chia seeds in ¼ cup almond milk
- Mash 2 bananas
- Place all other ingredients into large mixing bowl or thermomix
- Stir then add bananas
- Warm oven to 180
- Place mix into mini muffin tray
- Bake for 15 mins
This is a favourite for Winnie and Freddie. They love a little healthy snack that will keep them energised for the afternoon. They taste delicious and make a wonderful bite size snack.
