As we feel the seasonal change commence, the mornings becoming darker, the air crisper and pulling out our winter coats and hot water bottles, we need to nourish, ground down and keep warm.
Our previous blog post is a guide to this seasonal change that is Autumn, with diet and lifestyle adjustments to make to ensure a happy and healthy transition into the new phase.
Below we have a delicious and nourishing Conjee recipe from our beautiful Phoebe that will help balance our Yin and keep us feeling great.
A great meal to share with a loved one!
Chicken Congee Recipe
1 cup cooked white rice
2.5 cups water
1 organic chicken thigh
1 tablespoon freshly grated ginger
1 clove garlic
Tamari (optional: soya sauce instead)
- Combine rice, water, chicken thigh, ginger, garlic, spring onion in a pot on medium heat bring to a boil. Reduce heat to low to simmer, stirring occasionally and ensuring rice doesn’t stick to the bottom. Simmer for approx 35 mins
- Remove chicken thigh after 10-15mins (or once cooked) shred with two forks. Set aside as the rice continues simmering.
- The texture should be thick, you can adjust to your liking by adding more water if needed, or simmering until thicker.
- Serve with a splash of tamari and garnish with shredded chicken & seaweed
