RECIPE: Sausage and Cannelloni Bean Stew

Fran & Jo from Franjos share one of their favourite recipes. Smuggling vegetables into your meals can be tricky, especially when little ones are onto you! By offering your child a variety of options you’ll be more likely to grow a true vegetable lover. This dish is a winner for the entire family,  is super easy and a great way to pack extra veg into your meals.   The key is to sourcing great sausages and a butcher. If you don’t have a great butcher close by, then coles or woolies organic sausages are second best.

We usually eat sausages with veggies (sweet potato and pumpkin) with steamed greens. This sausage and cannelloni bean stew is a total winner!

INGREDIENTS

Olive oil

1 onion diced

1 clove of garlic finely chopped

1 teaspoon paprika

6 (organic)sausages cut into bite sized pieces

1 capsicum diced

1 courgette grated

1 carrot grated

1 can (400gram) of tinned tomatoes

1 can (400gram) of cannelloni beans

Veggie stock paste (a thermomix staple – can be omitted if you don’t have any, you could use any other good quality stock)

1 cup of water (omit if using stock)

A small bunch of spinach or silverbeet finely chopped

METHOD

  • Heat the olive oil and fry the garlic and onion until soft
  • Add the paprika and sausages and brown for a few minutes
  • Add the capsicum, carrot, courgette, chickpeas, canned tomatoes and stock (either one cup of water with a tablespoon of veggie stock paste or one cup of good quality stock)
  • Simmer for 20 minutes
  • Stir through the spinach/silverbeet
  • Serve with mashed potatoes/sweet potato, brown rice or pasta
  • My husband and I also like to add chilli flakes to spice it up!

Jo is an experienced naturopath, nutritionist and wellness consultant with an obvious zeal for her craft who was embarking on a journey of developing nutritious and health promoting food products. Once they got chatting, Franjo’s Kitchen seemed obvious, they could combine their experiences and skills and create something wonderful.
